Arugula

Delightfully spicy and nutty in flavor. Farmer Kyle’s favorite salad base.

Flavor & Preparation

Arugula is best known for it’s peppery zing, but we love the complex flavors that vary as leaves mature. Young leaves will have an herbaceous tone, that takes on mustard flavors, and ultimately becomes lightly bitter when fully mature.

Arugula is a robust green for salad bases, standing up to rich nuts, strong cheeses, and flavorful dressings.

Leaves can also be quickly cooked for a warm side that pairs well with proteins and pastas.

Health Benefits

  • High in vitamin C, K, and folate, all good for heart health

  • Contains glucosinolates, a sulphur-containing compound that reduces the risk of cancer

  • Promotes healthy skin reducing sun damage, eczema, and acne
