Frisée

Bold, crisp, and as beautiful as it is flavorful, this green is no garnish! Frisée is an excellent base for flavor-forward salads and can handle robust creamy dressings without losing its characteristic texture.


Flavor & Preparation

Frisée is not shy in the flavor department. It’s characteristic peppery flavor borders on bitter, and makes it a solid choice for salad bases and sandwich toppings. Try pairing it with bold dressings and toppings for a hearty meal.

Where other greens may be more mild in their profiles, frisée stands up well to cured meats, salty nuts, and strong cheeses. Consider a charcuterie-inspired salad with blue-cheese vinaigrette dressing (see below!).

Frisée’s curly leaves hold dressings well, and will ensure every bite of your salad is packed with flavor. These leaves will also hold onto water, so this is one of the few greens we recommend not washing ahead of time. Instead, store your frisée unwashed in a plastic bag in your refrigerator for up to a week. If you’ve left it a bit longer, soak leaves for 15 minutes in cold water and watch leaves crisp right up!

If salads aren’t your thing, try using frisée on top of sandwiches or burgers to punch up the flavor and texture. Peak season is the Autumn (and through Winter harvests), and we love using it in heartier, cold weather fare.
