Flavor & Preparation

Summer squash come in a variety of shapes and colors, but all of those we grow boast a delicate outer rind and smoothly textured flesh.

Summer squash lends itself to easy summer preparations: grilling, sautéing, and roasting:

  • Cut in half lengthwise and roast in the oven with salt, pepper, and a little parmesan cheese

  • Slide thinly and sauté with garlic, salt, and pepper as a fresh side

  • Combine with red onion and meat of choice for a marinated shish kabob

  • These underrated vegetables contain tons of Vitamin C, folate, and fiber
